Robert Mondavi, Pooh and Sue

Happy Sweet Sixteen or multiple thereof  😀 to my friend Sue and her life long friend and companion Pooh!!!! 

She writes Polysyllabic Profundities –    Random thoughts with sporadically profound meaning.

I am so thrilled to be nominated for this award.

I find myself extremely honored to be receiving such an important award The Best Moment Award, though I also must admit that somewhere deep inside, I saw it coming one day. 😀

I am earnestly grateful for the recognition I have received for my work. I have faced several challenges on my way here, but each has only strengthened me to make me the person I am today; a thorough professional pppffffttttt  who knows exactly what she wants chocolate and wine; someone who sets her eyes on a goal and does not take them off it unless it is achieved finishing a bowl of pasta in record time.

Meatless Monday Moo Shu

This vegetarian version of the classic Chinese stir-fry, Moo Shu, uses already-shredded vegetables to cut down on the prep time. Serve with warm whole-wheat tortillas, Asian hot sauce and extra hoisin if desired.

Ingredients

  • 3 teaspoons toasted sesame oil, divided
  • 4 large eggs, lightly beaten
  • 2 teaspoons minced fresh ginger
  • 2 cloves garlic, minced
  • 1 12-ounce bag shredded mixed vegetables, such as “rainbow salad” or “broccoli slaw”
  • 2 cups mung bean sprouts
  • 1 bunch scallions, sliced, divided
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons hoisin sauce

Directions

  • Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Add eggs; cook, stirring gently, until set, 2 to 3 minutes. Remove to a plate.

Wipe out the pan and heat the remaining 2 teaspoons oil over medium heat. Add ginger and garlic and cook, stirring, until softened and fragrant, 1 minute. Add shredded vegetables, bean sprouts, half the sliced scallions, soy sauce and vinegar. Stir to combine. Cover and cook, stirring once or twice, until the vegetables are just tender, about 3 minutes. Add the reserved eggs and hoisin; cook, uncovered, stirring and breaking up the scrambled eggs, until heated through, 1 to 2 minutes. Stir in the remaining scallions and remove from the heat

Tequila Sunset at Royal Albert Hall

A twist on a mojito, this is a must-try.

This is a great drink to enjoy on a Friday night to start the weekend.

Go for the best quality tequila you can afford – it will be worth it.

Ingredients

40ml Tequila Jose Guervo

75ml cranberry juice

6 mint leaves

3 brown sugar cubes

Half a lime

Crushed ice

Muddle the sugar, mint leaves and lime.

Fill the glass to the brim with crushed ice and pour in the tequila. Top with the cranberry juice and serve.
