Raw and Vegan – Mango Raspberry Tart

I found this great website called Sweetly Raw she’s got all kinds of yummy good for you vegan deserts.  I love mango and of course raspberries, I can’t wait to make this!!!

Mango Raspberry Tart

Crust:

2 cups nuts of choice

3/4 cup pitted, packed dates

Grind the nuts and dates together in a food processor. Add 1-2 teaspoons of water if the mixture is too dry and crumbly.

Press the mixture into an 8″ tart pan, or use mini tart pans.

Filling:

2 cups diced mango

1 1/2 cups cashews

1/4 cup agave

2 tablespoons melted coconut oil

1-2 tbs lemon juice

1/3 cup melted cacao butter

2 cups raspberries

Blend all but the cacao butter, coconut oil, and berries, until smooth and creamy.
Add the cacao butter/oil and blend until completely mixed.

Evenly spread some of the raspberries over the crust and then smash them down with a fork.

Spread the mango filling over top.

Garnish with the remaining raspberries (and more if needed).

A Libra, stuck at a fork in the road

I have a job which I like, but do not love.
Growing up I hated math.
Now that’s a big part of what I do all day.
My job is very solitary.
I am a people person.
Growing up I wanted to be a nurse, a vet. I am neither.
I like to help people, make them smile and make a difference.
I don’t feel that I am doing any of these things currently.
I have found a job that I know I’d be good at.
The job involves conducting fitness tests, and assessments, scheduling facility programs and staff, design, develop and deliver social/recreational programs to the elderly and disabled.
This I know would come with its own challenges.
I love to learn
This job requires continuous learning, to the well-being of others and myself,
My job  requires neither.
This job would require being on call, weekend and night work.
The girls are getting older and don’t need me around as much as they used to.
I work Monday to Friday 830 – 3 most days.
The pay would be around the same.
I would eventually have full benefits and job security.
I have neither now.
At the end of the day I think I would happier.
Now I come home most days feeling taken advantage of,underappreciated and defeated.
I have a funny feeling as I tap at the keys on my keyboard that I am answering my own questions…..

I am a Libra, who can be very indecisive weighing things back and forth back and forth while standing still in the middle unable to move.
I have been down the hall from deaths door twice and there is a great potential to be there again, I have learned to appreciate all that’s around me and to appreciate each day, to be happy, I find myself often unable to feel this way.
I treat others with kindness and respect and expect and deserve the same.
I need to make some changes in the best interests of my family and myself.
Life is too short and too precious to be wasted, it was not my time to go through that dark door not just once but twice, why am I wasting this gift?

Falling off the wagon Caribbean style

Well it’s Friday.
I have fallen off the wagon.
I have had 2 bottles of beer since I came home around 5, so that’s not too bad, about 1 beer per hour…tee hee hee 😀
I think I will have one of these next 😀

I have had Malibu coconut rum with Five Alive and Mango juice very, very nice!

I’m off to meet daughter #3 who has been enjoying an extended vacation with Grandma, niece #1 and niece #2 oh and of course my lovely sister…:D From there we are travelling two hours north to my brother’s house to drop off niece  #2.

Megz and Lolo

Travelling-with-Kids-to-Europe

My daughter Meghan is finally home. She’s been on a wonderful trip to Alberta, she and a friend “Lolo” flew out two weeks ago, and just returned home today.
It was their first big trip alone. They are only 14.  They stayed with a friends family who was gracious enough to keep them both for 2 weeks whom they’d only met on an exchange trip they took this year with their class.

I can’t thank them enough for allowing the girls to stay with them for such a long time and helping to give them such a wonderful experience!

On the way home they needed to take a 3 hour bus ride back to Calgary Airport, another adventure in itself , board the plane, which had been delayed an hour and finally back to Toronto, where “Lolo’s” father picked them up at 10:30pm and then spent the night in Toronto before heading home today.

We are busy catching up, she really hasn’t stopped telling me all about their trip since ohhhh about 3.5 hours ago, she is having a much-needed shower, so I have a little time 😀

I am so happy she is home.
