I finally dragged myself out of bed this morning after hitting snooze a few times and stumbled to the kitchen for my coffee and proceeded to take  the dogs outside.
When I came in I thought to myself,  
“gee I think I’d like some toast and peanut butter”…

and this is what I found!!!

Daughter #1 has left on her first real vacation as an adult.

She’s gone to Cuba, Iberostar Laguna Azul to be exact 😀

Finding Beauty and Awesomeness.

I’ve always noticed the beauty in everything around me, but lately I seem to be paying more attention and appreciating more.  I am starting to appreciate my friends and family even more than I did before, finding joy in the glitter on the snow at night when the moon is full, the silence outside early in the morning….what’s going on?   😀

We’ve received a ton of snow this winter and everyone has just about had it including myself, it seems to snow everyday and when it’s not snowing its brutally cold.  I still find myself looking at snow drifts and the way the snow hangs off the trees and roofs.  Looking at the moon when I’m out with the dogs and seeing nothing but blue all around me…and I love it!!  I’m smiling more, even if I see a funny looking vegetable at the grocery store I find my self smiling.

I was out on Friday night and it was cold and blowy, I was driving the kids to the dance that’s held every month ..  The wind was so strong it was blowing the snow across the highway , swirling and jumping across the highway and in the headlights it was one of the most beautiful things I’ve seen, I mentioned it the girls sitting in that back seat, they all just kind of groaned and went back to chatting and listening to music..I even noticed how the wind was blowing flags on the lamp posts around  town!  And again mentioned it to the girls and was greeted with more groans 😀

The more I think about it its a little bit like the book The Book of Awesome finding the little simple things in life that make us happy like warm underwear out of the dryer .  😀

I’ll have to admit its beginning to drive me a little crazy, everywhere I look I find something to appreciate. 😀

I think Neil and I must have had similar mothers 😀

I do have my mother to thank for this, growing up she’d always say oh look at this, look at that, look how the waves are coming up on shore, look up close at the dew on the grass blah blah blah 😀  When I was younger I’d say things like “yes mum, that flower is pretty” ” yes I see how pretty the moon is” and on and on, she was and still is forever taking photos, when we are camping or going for walks, out for dinner there is my mum, oh stop right there, oh that’s beautiful, I’ve got to take a picture.  😀

Mum finds beauty and awesomeness in everything too, she even sees the beauty in a sushi roll 😀

I now have a much greater appreciation for everything around me.  To see the beauty and the awesomeness in the little things.

Thank you Mum for showing me how to see the beauty in everyday things and people it is the best gift you’ve ever given me.

Veggie Nasi Goreng (Indonesian Fried Rice)

Veggie Nasi Goreng

Ingredients

  • 1 cup uncooked Wild, Brown Rice or mixture
  • 4 eggs
  • 2 yellow, red or orange peppers
  • 4 Red onions
  • 2 carrots sliced with a potato peeler
  • 4 red chilies
  • 5 – 10 garlic cloves
  • 4 Spring onions (cut length wise)
  • Cilantro (large handful, to desired)
  • 8 tablespoons Sesame oil

Directions

Cook rice as directed and set aside.
Scramble or fry eggs and also set aside.
Add two onions, half a chili and garlic to bender to make a paste.
Add oil and the paste (from the blender) to frying pan and fry 3 minutes, then add thinly sliced onions, red chilies, yellow peppers and carrots for another 3 minutes.
Add the rice for 2 minutes, then the eggs, thinly sliced spring onions and cilantro for another minute and serve.

It is another frosty morning in Muskoka -33 degrees F!!!  That’s before the windchill has been factored in which then makes it around -40 something!!  School buses were cancelled once already this week due to the extreme cold.  Daughter #2 is in the middle of exams and luckily wrote her Science exam yesterday and has today off because… I’m thinking buses may be cancelled again today.  (which they were not)

We have had Bentley with us this week, which means not too many blog posts.  When Bentley is visiting I need to put the cats food up on the dining room table where I have my laptop, the cats love to torment him from up high which upsets Scampie which in turn upsets Sims which means I don’t get much peace and quiet.

This morning is unusually quiet so I’ve been able to post what I think is a fantastic recipe for a Hot Obama!!

“I created the Hot Obama cocktail at JoeDoe to satisfy the hot toddy drinkers during the wintertime. It’s hot (temperature), tart, and a little sweet, and is the perfect start to a meal at JoeDoe. The dust of cinnamon gives it a little spice.  And the name, well, whether Obama is ‘hot’ or ‘not’ to you right now, you’ll still like the drink.”

Ingredients

  • 1 1/2 ounce(s) English harbour rum
  • 1 ounce(s) fresh lemon juice
  • 3 ounce(s) hot apple cider
  • 1 ounce(s) hot water
  • 1 teaspoon(s) cinnamon

Mix together all ingredients. Grate fresh cinnamon over top. Garnish with cinnamon stick. Serve in a heat-resistant glass mug.
