Veggie Sandwich

This recipe is so easy and absolutely delicious!!

 

Late Summer Veggie Sandwich

1/2 cup softened goat cheese (you can use cream cheese if you do not like goat cheese or are looking to save some money)
2 tablespoons chopped fresh flat leaf parsley
2 tablespoons chopped fresh basil
1 tablespoon finely minced shallot
Pinch of salt
Pinch of freshly ground black pepper
Nonstick cooking spray
1 zucchini, cut into 1/4-inch planks
1 yellow squash, cut into 1/4-inch planks
1 jarred roasted red pepper, cut into strips
8 slices whole grain, gluten-free bread

In a small dish, combine the goat cheese or cream cheese, parsley, basil, shallot, salt, and pepper. Stir until combine. Set aside.

Heat a large nonstick skillet over medium-high heat. Spray with nonstick cooking spray. Arrange the zucchini in the skillet. Cook for 2-3 minutes or until it begins to brown, flip, and cook 2-3 minutes more to brown the other side. Place on a plate and repeat steps for the remaining zucchini and yellow squash. Set aside.

Toast the bread slices in an oven or panini press. Spread each slice with 1/2 a tablespoon of the herb cheese mixture. Layer the zucchini, squash, and red peppers on one side of each slice. Top with the other slices of bread and serve.

The Avocado Summer Mexican Salad

The Avocado Summer Mexican Salad

Serves 2

Ingredients

2 Wraps/Tortillas – preferably sprouted or yeast/gluten free
1/2 pack of firm tofu
1 avocado
1 pink grapefruit
A handful of almonds
4 handfuls of baby spinach
1 spoon of chilli sauce
2 tomatoes
1/2 red onion
1/2 lemon

Instructions

Firstly, get the tortilla bowls ready by preheating the oven to about 180 degrees celsius. Once it has preheated, place the wraps over a medium bowl, push them in slightly and then bake for 8-10 minutes until they’ve formed a bowl shape and crisped up a little. Once they’re done place to one side and cool

While this is cooling, chop up the tofu, onion and tomatoes and mix with the chilli sauce and then place in the fridge for 10 mins to cool a little. While this is cooling, finely chop the almonds and peel and slice the avocado and grapefruit.

Now mix it all together, place in the bowl and top with the spinach before squeezing the fresh lemon on top. Delicious!

It’s Wednesday night but as your reading will be Thursday morning.

My mother, had a sleep over…..I bought wine…..we drank it.

We had an awesome conversation, solved all the worlds problems
and then
just as we were discussing how to take over the world she went to bed!

The real story behind the wine

Dad suffers from Parkinsonism an evil cousin of Parkinson’s.  He has been fighting bronchitis and it has turned into pneumonia. Dad has a hard enough time breathing and swallowing without being ill, this infection is really knocking the stuffing out of him, it was decided on Monday after 2 weeks on antibiotics to be sent to the hospital on Monday for chest x- rays, my daughter is a PSW at the long term heatlh care facility that Dad calls home.  She was off on Monday and was there visiting, She volunteered to go with him with strick orders from me to make sure they were gentle and kind as of course they would be but he is unable to speak and his body is so rigid that I worry if he is left alone, she stayed there until either my mum or myself arrived.  She texted me throughout the day saying he was fine…I was at work…just routine she said….I still should have gone.

It is Wednesday night and he is still in hospital, I hope he is sent “home” soon.  Mum spends all day at the hospital with him.  He is enjoying the morphine and extra meds he’s getting as mum did when she had her knee surgery and might I add you would never know she had surgery!  She is doing so well, no limping , nothing she is just like she was before.   I cant imagine my life with out this woman in my life! Such an inspiration!  Mum is taking the girls on a 3 week trip to PEI at the end of June, this has been her motivation  booze talking 😀

A friend of mine has just started cancer treatment at Princess Margret Hospital in Toronto, he has been diagnosed with Stage 3 Nasopharyngeal Cancer.  This type of cancer most common in people of Asian decent, he is not Asian but is however he is the 3 rd patient from Newfoundland to be diagnosed with this type of cancer.  He is into Day 4 of treatment, his positive attitude, along with his strong will, amazingly supportive friends and the great care he’s getting is going to get him through.

It’s been an emotional couple of months and in particular the last couple of weeks the wine has been quite helpful tonight , I’ve been “bottled” up lately and not talking too much … amazingly,  I am so thankful for my Stoneleigh Sauvignon Blanc this evening and that Mum was kind enough to share it with me 😀 😀

On the up side, Daughter #3 is involved in an exchange trip with her class as Daughter #2 was last year, they flew out yesterday for Saskatoon, she’s landed safely and will have a week full of fun and new experiences.

It is now Thursday and Dad is still in hospital pneumonia as my sister said “can be quite tricky”.

Well this has been fun I think I will “write drunk, edit sober” again. During my “editing” I deleted a whole lot, lucky for you.  This has been very therapeutic.

Once again the reason I chose this wine was for the label 😀

Watermelon Salad

“Surprising yet delicious combination of ingredients that can be had as a starter salad, healthy snack or a light meal.”

We had this as a side dish last night, kids really enjoyed which was surprising! But the next time I make it I think I’ll omit the cilantro….

 

Ingredients

Serves 6

1 tablespoon and 1/2 teaspoon lime juice

1/3 cup and 1 tablespoon sliced red onion, cut lengthwise

6 cups cubed watermelon

1 cup and 3 tablespoons cubed English cucumber

3/8 (8 ounce) package feta cheese, crumbled

3 tablespoons and 1/2 teaspoon chopped fresh cilantro

cracked black pepper

sea salt

Directions

1.In a small bowl, pour lime juice over red onions. Allow to marinate while assembling the salad.
2.Gently combine the watermelon, cucumber, feta cheese, and cilantro in a large bowl. Season with black pepper. Toss watermelon salad with marinated onions and season with sea salt just before serving.
