This is one of those meals that looks really fancy but actually requires no brainpower. You need three things: fresh basil leaves, fresh tomatoes, and fresh (soft) mozzarella cheese. Slice the tomatoes and cheese and stack (tomatoes first, cheese on top) with one or two basil leaves. Arrange like patties on a plate (3 or 4 per person) and sprinkle with a little olive oil, balsamic vinegar, salt and pepper. Delicious. Fast. Cheap.

That would probably taste really good….but then would not be meatless ma’am π π π I may try with bacon too!!!
And we grow tomatoes and basil in our garden, so we just go out back, pick what me need, grab some cheese from the fridge, and voila, instant delicious meal.
We’ve played around with some flavored vinegars to get the dish a little bit extra depth, but it really doesn’t need it.
It’s so nice to go out to the garden and get dinner π I agree leave the flavored vinegars out, this is delicious on it’s own!
